Aunt Clara's Tomato Tart
1 cup crushed soda crackers
1/4 cup vegetable oil
celery seed or thyme (optional)
2/3 cup shredded cheese
2 med. tomatoes, sliced
salt, pepper, (oregano if desired)
3 eggs, beaten
1/2 cup milk
4 slices bacon, fried crispy
Combine cracker crumbs, oil, celery seed and thyme. Press into a deep 9 inch pie plate to cover sides and bottom. Sprinkle half the cheese into the crust. Cover with half the tomato slices. Add salt and pepper. Add remaining cheese and tomatoes. Sprinkle on seasonings. Pour the eggs and milk over. Sprinkle crumbled bacon on top. Bake 10 minutes at 400 degrees, then 1/2 hour at 325 degrees. Cool 10 minutes.
