Preheat oven to 425 F; grease muffin tins or 8" or 9" cake pan well.
Sift and blend together:
2 c cornmeal
3 tsp baking powder
1/2 tsp salt
Stir in 1/2 c white sugar
Beat together:
1 egg
1 1/4 c milk
1/3 c melted shortening or oil
Add liquid to dry ingredients.
Stir just until combined.
Fill tins 2/3 full and
bake for 20-25 minutes.
